Originating from the Ottoman Empire (modern-day Turkey) in the 18th century, Chicken Shawarma makes a nutritious delight for meal prep, dinner, or a filling snack!

Ingredients:
2 lb chicken thigh filets
Marinade
1 garlic clove, minced
1 tbsp ground coriander
1 tbsp ground cumin
1 tbsp ground cardamom
1 tsp ground cayenne pepper (1/2 tsp for no spice)
2 tsp smoked paprika
2 tsp coarse salt
1 tsp ground black pepper
2 tbsp lemon juice
3 tbsp olive oil
1. Marinade Combine the marinade ingredients in a large bowl or ziplock bag, add
chicken, and mix well to make sure each piece is coated. Marinate for 24 hours, or at least 3.
2. Cook the chicken
Grill: place chicken on a nice med-high heated grill, and cook for 4-
5 minutes on each side until nicely charred.
Skillet: heat a large non-stick pan with 1
tablespoon of olive oil over med-high heat, and cook chicken for 4-5 minutes on
each side until nicely browned.
3. Let the chicken rest for a few minutes and slice!
To Serve:
Pile onto a platter alongside flatbreads, lettuce, sliced tomatoes, cucumbers, red onion
and yogurt sauce, tahini or hummus and enJOY!
Chef’s Pro Tip:
You can use chicken breast, just be more careful to not over cook! You can also make this recipe ahead by mixing the marinade and chicken in a Ziplock bag and freezing, and
